When it comes to Baby Led Weaning it can be very easy to fall into a routine and feed your baby the same things all of the time. I always feel a little bit guilty when I'm sat stuffing myself with a takeaway on the days I can't be bothered to cook and I don't want my daughter to feel left out. I was recently sent the Flavour Led Weaning book and here I found the recipe for Cheesy Tortilla Pizza Slices which is basically a healthier version of a pizza that both babies, children and adults can enjoy. 
The reason I love this recipe so much is that it is quick and easy to make but you could also jazz it up and add fruit and vegetables to it for different tastes and textures. It's the perfect finger food but it is advised for babies that are 10 month's plus. As well as this, once you've made a batch of the sauce up once its cooled it is perfect to freeze and to use again to make it even quicker on those sluggish days. I like to offer the cheesy tortilla pizza slices along with some peas and sweetcorn and sweet potato wedges. 

All the ingredients you will need to make 2-3 pizza's are as follows:

Pizza Sauce:
200g tinned plum tomatoes
5g dried apricot - finely chopped (I swapped this for dried mango as it was easier to find in my local)

1/2 tsp minced garlic
1/4 tsp dried oregano

Pinch of ground black pepper

Pizza Base:
2-3 mini tortilla wraps - white or wholemeal
15g medium cheddar cheese - grated

1. Preheat the grill to medium-low.

2. Pop the tomatoes and apricot (mango in my case) in a food processor and blend until smooth, then pour into a saucepan and add the garlic, oregano and black pepper. 

3. Simmer on medium low heat for around 6-8 minutes, until the sauce has thickened. Set aside. 

4. Lay the tortilla on a foil covered baking tray and spread 2-3 tablespoons of pizza sauce evenly over the tortilla.

5. Sprinkle over the grated cheese and pop it under the grill until the cheese has melted and is bubbling. This will only take a minute or two so keep your eyes on it! 

6. Remove from the grill, then cut into triangles. Leave to cool before serving to a baby. 

A tip from Zainab is to add chopped peppers, mushrooms and sweetcorn kernels to the pizza to make it more filling for older children and a great snack to enjoy for adults too! It's just a simple and a quick recipe and Imogen loves it when I make these for her and I love to use the sauce on pasta for myself (dairy intolerant).
